Well last weekend we finally got rid of a freezer full of Huckleberries from Camp Loll! Well I may be exaggerating a little. The freezer wasn't full, but we had a lot for two people! I'll admit it. During the last month of camp I caught the fever. Huckleberry fever. I was told before they were even ripe that you know you have the fever when you close your eyes to go to sleep at night, and you see Huckleberries! To tell you the truth I didn't believe them at first. But sure enough when the Huckleberries were finally ripe, I would spend as much free time I could (which was not much) and pick and pick and pick... and at night when I closed my eyes...yep. Huckleberries. For those who have never tried them fresh- they are amazing!
Well we figured the best way to preserve them for a long time was to can some Huckleberry jam. I've never canned anything in my life so I was a little bit nervous, but we did just fine! All the jars sealed well on the first try. Well we only had 14 jars, but it seemed like good luck to me!
